Jean-Louis has found his own unique style of winemaking and has pushed his wines to a place that is really quite special. He has abandoned conventional farming in favour of organic many years ago and has now become at one with his vines and his wines. He has come to realise and practice that with near perfect work in the vineyard of a great terroir, one must observe more and react less.
The grapes come from local farmers, with organic certification, and are vinified in carbonic maceration on indigenous yeasts. The Chiroubles of 2017 comes from a single vineyard of 70 years of average age; the grapes are vinified in cement and aged in steel and neutral oak for six months.
Chiroubles is the most delicate of all the Beaujolais crus, with its light and fragrant character. In fact it is the cru that matures before all the others. Its bouquet is well developed and it already has charisma when the others are still stutterers.
