Blanc de blancs style, meaning just white grapes, in this case 100% Chardonnay. Very much Champagne in style, with a long ageing of two years on the lees. Opulent and rich but with great acidity, and no added sugar so bone dry and thirst quenching.

Domaine des Ronces was founded in 1950 by Georges Mazier, located in the lesser-known south of Jura, within the municipality of Orbagna. Starting off with just 1ha, son Michel has since grown that to 6ha, yet they still run a small, humble operation. This scale, or lack there of, enabled them to convert to organic practices In 2010, and a step further to biodynamics just four years later.
