    DESCRIPTION

    Ca' di Rajo Lemoss is essentially an unfiltered Prosecco. It's the same grape as what's in Prosecco, from the same region, however doesn't follow the Prosecco DO rules. So this wine therefore cannot be called Prosecco. Confusing we know. Like a lot of our wines on the Plonk site, this is small production and uniquely made. The label is also pretty cool.

    Here are the details. Hand-harvested off of vines in clay soil 30m above sea level. Softly pressed at the winery to avoid bitterness and astringent notes. 12 hours on skins to help soften the acidity and promote natural aromas. Fermented with wild yeasts for around 10 days. Secondary fermentation takes place in the bottle, once again using natural yeasts. Goes through malolactic ferment in the bottle and rests for 60 days prior to release. It's a perfect entry in the world of Pet-Nats.

    The Rajo Lemoss fragrant and floral on the nose with a bone dry palate. Loads of flavours on show here, apple pie, lemon, bread crust and grapefruit. Semi scented length and super refreshing. It's more expressive than your standard Prosecco and a little more complex. It also offers ridiculous value for money, which is what we are all about. We have been assured that this matches perfectly with a fragrant risotto, so get around it!
