Sur Lie - a technique often enlisted in Muscadet. The wine ages on the lees - a method that leaves the grape juice in contact with dead yeast cells following fermentation. This softens what would be a very high level of acidity, bringing with it a slightly softer, rounded texture to sit alongside the bright freshness of the wine. A winner for any season of the year.
Olivier Lebrin is working at some of the highest levels of promoting biodiversity in viticulture in the Muscadet region. A region known for fresh white wines, Olivier is not only producing whites of great concentration, whilst retaining the iconic acidic and mineral backbone of the area, but is master of many other styles - namely some fantastic "bulles" (sparkling wines) and rosés. This is not only thanks to his hard work and constant application to his trade, but the balanced ecosystem that he creates for each individual vineyard, allowing every vine to flourish.
