Where do we start with this! Wow, just wow. There's a lot going on with this wine, its seriously complex.
It's 66% Grenache, 23% Mourvèdre, 11% Syrah. Fermented in open-top fermenters with 60% whole-bunch. No sulphur is used throughout the winemaking process and only added prior to bottling. It gets a post-fermentation maceration (extended time of the skins) and is transferred to a basket press to get the juice. It then sees 9 months in old oak.
Upon pouring, the aroma jumps out! It's fresh and lively but with a lot of layers. Super spicy back palate with a long and delicate finish. Near perfect balance!
