2017 CABAL Pinot Noir, from North Canterbury, fasten your tastebuds as this is one hell of wine! Plonk is one of the first business to work directly with Cabal Estates and we couldn't be more excited. First of all, let's talk about New Zealand. Deep in the Southern Hemisphere, New Zealand is famous for Sauv Blanc. However, flying a little under the radar in comparison is Pinot Noir. Planted in most of the regions in New Zealand, the diversity of styles is dramatic.
This CABAL Estates Waipara Pinot Noir comes from North Canterbury, located in the northeast area of the Southern Island. Theo Coles makes an expressive style that's obviously Pinot but with loads of concentration. What's interesting is that it all comes from one clone type of Pinot Noir, 10/5.
The process here is 100% stainless steel ferment and then 100% old oak maturation. Wild yeasts for the ferment with extended bottle ageing to really soften out the tannins. Aromas of red flowers, red plum and green spices. Has delicately peppery tannins (quite an old school Omihi Pinot style). More grip than 2018 which we will release soon. Classic Canterbury Pinot with a long complex finish.
The CABAL story is this, Ed, the proprietor started this project 5 years ago, it's been that long in the process. Very, very limited. A true small production example. Only 3000 bottles of 2017 were produced and only 600 bottles of 2018. So you got to get in fast and this is finite.
